And if you have not baked these chocolate chip shortbread cookies all that you need are simple flour, unsalted butter, confectioner’s sugar, vanilla extract, peanut butter and chocolate chips and. Add the vanilla, then beat in the cocoa on low speed. I have made other cookies with margarine in place of butter and they were fantastic. These chocolate shortbread cookies are mixed with cocoa powder in the simple butter dough. Bake the traditional way or shape into individual cookies. Vanilla Shortbread Cookies With Peanut Butter And Chocolate Glaze

These Buttery, Delicate Vanilla Cookies Are Topped With A Whipped Peanut Butter Cream And Then Drizzled With A Rich Chocolate Glaze..

INGREDIENTS:

  • 1 cup unsalted butter (softened (2 sticks))
  • 1/2 cup sugar
  • 2 cups flour
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • granulated sugar (for rolling cookies in)
  • 1/4 cup butter (softened (1/2 stick))
  • 1/3 cup brown sugar
  • 1/3 cup peanut butter
  • 1/2 cup chocolate chips
  • 2 tablespoons milk
  • 1/3 cup powdered sugar

INSTRUCTIONS:

  1. For vanilla cookies, cream together butter and sugar until light and fluffy. Add vanilla and mix to incorporate. Slowly add flour and salt and mix until combined. Chill dough for at least an hour.
  2. To make the peanut butter cream, mix peanut butter, butter and brown sugar until smooth.
  3. For the chocolate glaze, heat chocolate chips and milk in microwave for 10-15 seconds, remove and stir until chocolate chips are melted (you may need to heat it for another 10 seconds). Although the chips may not look melted, they will usually melt quickly when stirred, from the residual heat. When smooth, add powdered sugar and stir until smooth again. Spoon into a piping bag.
  4. When ready to bake cookies, heat oven to 350°F
  5. Roll dough into 1 inch balls, then toss in granulated sugar. Using a glass with a flat bottom that is about 1 and a half inches in diameter, press the dough ball to flatten. Dip glass bottom into sugar between cookies to keep it from sticking.
  6. Bake for 12-15 minutes until edges are golden. After removing from oven, allow to cool on baking sheets. Allow cookies to cool completely.
  7. When cookies are cool, spread a thin layer of peanut butter cream onto each cookie.
  8. Using the piping bag, drizzle chocolate glaze over cookies.
  9. Allow to sit for several hours before storing so that the chocolate glaze can firm up.

Peanut butter and jelly thumbprint shortbread cookies. Crisp and tender butter toffee shortbread slices are dipped in chocolate and finished with more sweet mix in vanilla extract then with mixer set on low speed slowly add in flour mixture and mix until nearly. Chocolate peanut butter cookies are the best of both worlds. Beat with electric mixer at medium speed until well blended. These chocolate chip cookies will look a little doughy when you remove them from the oven, and chocolate chips, sprinkles, peanut butter chips, etc. Do not change anything else in this recipe. Beat in eggs and vanilla until fluffy. Beat butter and sugar in large bowl with mixer until fluffy. Gradually add flour mixture, beating well.
