Fresh, lightly toasted bagels have the best flavor and texture. Pour mixture over bagels making sure to coat each bagel piece. A great way to use leftover bagels for a great breakfast the next day. Push bagels into egg mixture to get them well coated. I love using sweet bagels to make this simple recipe. Here’s another bagel option, this. Layer the ingredients overnight and wake to savory, breakfast perfection.

I thought it was dry and burnt on the edges. For this particular recipe, i started with french bread and a dozen. If you don’t like everything bagels, use onion, plain or whatever is your favorite kind. I am not big on making huge breakfasts. When i get up, i’m all about getting everyone fed quickly. Nothing says flavor like an everything bagel.

Overnight Everything Bagel Breakfast Casserole

This Easy Make-ahead Breakfast Is Loaded With Delicious Bites Of Everything Bagels Baked In A Flavorful Egg Scramble With Sausage, Peppers, And A Three-cheese Combination..

INGREDIENTS:

  • 6 everything bagels (lightly toasted)
  • 8 large eggs
  • 1 cup half and half
  • Salt/pepper (to taste)
  • 2 tablespoons Dijon mustard
  • 1/3 teaspoon cayenne pepper
  • ½ cup Parmesan (shredded)
  • 1 cup grated cheddar (divided)
  • 8 oz. cooked sausage links (diced)
  • ½ bell pepper (diced)
  • 8 oz. cream cheese
  • 1 cup tater tots
  • Green Onions (to garnish)

INSTRUCTIONS:

  1. Break the bagels into bite-sized pieces and place into a buttered 9x13 casserole dish.
  2. In a large bowl, crack the eggs. Add the half and half, mustard, cayenne pepper, and salt/pepper. Whisk briskly for 1 minute.
  3. Pour the egg mixture over the bagel pieces, try to cover each one.
  4. Add the Parmesan cheese and ½ cup cheddar cheese to the casserole dish. Use a spoon to gently toss the casserole mixture.
  5. Cut the cream cheese into 14 squares.
  6. Distribute the top of the casserole with the cream cheese, sausage, bell peppers, and tator tots.
  7. Top with the remaining half of cheddar cheese.
  8. Cover and refrigerate for 4 hours or overnight. The longer it sits, the better/moister it will be.
  9. Bake, covered, at 350 degrees for 40 minutes.
  10. Remove the cover and bake for 15 more minutes.
  11. Let cool for 10 minutes. Serve with coffee and enjoy!

Adding this one ingredient to my breakfast bowl made me more regular. And mix it all together. Now, this will sit overnight in the fridge, mixing and melding and preparing to be a delicious. Thanksgiving and christmas is a great time to plan some simple meals. Breakfast is easy, too, any time of year. But especially scrumptious during the winter months.
