Let’s talk about these peanut sauce chicken and broccoli bowls. This is a result of my ongoing effort to incorporate more easy and healthy dinners. Soy sauce and peanut butter make a super flavorful sauce for this grain bowl. In a large bowl, stir together orange juice, peanut butter, and soy sauce. Healthy chicken breasts and veggies are cooked in an easy to make and super flavorful peanut sauce. Add the chicken broth, peanut butter, soy sauce, red curry paste, and sugar. In the meantime, today i’m sharing a recipe i created incorporating leftover peanut sauce from my thai chicken satay. Peanut sauce is like the chocolate sauce of dinnertime. I’m pretty sure i’d eat my shoe if it were covered in enough of it.

This chicken and broccoli recipe is the authentic restaurant version with a delicious brown sauce. Serve the sauce, chicken, and broccoli. I prepared it with steamed broccoli, and had an easy lunch for the entire week. I used chicken breasts instead of thighs, so that made cutting. If using a crown of broccoli, trim into florets and place in a steamer basket over a saucepan filled about halfway with boiling water. The concept of a chicken, rice and broccoli bowl is a nice idea but not this recipe. You could either roast them together in the oven. Set aside half of the sauce for serving and toss the shrimp with the remaining sauce. Veggie dip aside, this peanut sauce is wonderful over noodles and served with spring rolls.

Peanut Sauce Chicken And Broccoli Bowls

These Easy And Healthy Peanut Sauce Chicken And Broccoli Bowl Only Take About 20 Minutes To Make, And Is A Dinner The Whole Family Will Love! Serve With Rice Or Cauliflower Rice For A Quick And Healthy Weeknight Dinner!.

INGREDIENTS:

  • 1/3 cup peanut butter (natural)
  • 3-4 tablespoons water
  • 1/2 tablespoon low sodium soy sauce
  • 1 ½ tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1-2 teaspoons chili garlic sauce (to taste)
  • 3-4 garlic cloves (minced or pressed)
  • 2 teaspoons grated ginger root
  • 1 tablespoon honey
  • 1 pound boneless skinless chicken thighs (cut into bite sized pieces)
  • 4-6 cups broccoli florets (I used 3 crowns, cut into florets)
  • 1 tablespoons canola oil
  • salt (to taste)
  • pepper (to taste )

INSTRUCTIONS:

  1. Whisk together all ingredients for peanut sauce except water. Add water, 1 tablespoon at a time until desired consistency is reached.
  2. Heat oil in a saute pan over medium high heat. Add chicken and season with salt and pepper. Allow chicken to sit undisturbed for a few minutes, until it starts to brown. Turn and allow to brown on the other side. Stir and continue to cook until cooked through.
  3. Add broccoli to pan and cover with a lid. Allow to steam until broccoli is bright green and tender, -4 minutes.
  4. Turn off heat and add peanut sauce, stir everything to completely coat in sauce. Taste and adjust seasoning if needed. Serve right away over rice or cauliflower rice.

While chicken is cooking prepare peanut sauce, in a mixing bowl whisk together all peanut sauce ingredients while adding more water to thin if needed. Serve chicken warm garnished with cilantro and serve with peanut sauce for dipping. This chinese chicken and broccoli stir fry is easy and healthy with a sauce that takes just like takeout. Whisk the marinade ingredients together in a small bowl. Pour over sliced chicken and let marinate until ready to cook. In another small bowl, mix the cornstarch and water thickener and set aside. Wash and drain the add the broccoli and the velveted chicken, stirring and tossing to cook the chicken through. Add the chicken and toss in sauce to coat.
