2 lbs. Yukon Gold or Russet potatoes
2 Tablespoons Salted Butter
2 Tablespoons Olive Oil
1 teaspoon rosemary
¾ teaspoon oregano
¾ teaspoons thyme
¾ teaspoons sage
1/8 teaspoons nutmeg
1 teaspoon salt
1/8 teaspoon pepper
