INGREDIENTS:

  • 24 oz fresh blackberries
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup cold butter (finely cubed)
  • 1/3 - 1/2 cup cold buttermilk

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.
  2. Grease a 9-inch square baking dish and set aside.
  3. In a large saucepan, combine the blackberries, sugar, lemon juice, and lemon zest. Cook and stir until mixture comes to a boil.
  4. Combine cornstarch and water in a small bowl until smooth and stir the slurry into the fruit mixture. Bring to a boil, cook, and stir for 2-5 minutes or until thickened.
  5. Pour blackberry mixture into prepared baking dish.
  6. In a medium bowl, combine the flour, sugar, baking powder and salt. Cut in butter using a pastry blender until mixture resembles coarse crumbs.
  7. Stir in buttermilk just until moistened. Using a cookie scoop, drop spoonfuls on top of the hot berry mixture.
  8. Bake uncovered for 30-35 minutes or until filling is bubbly and topping is golden brown.
  9. Serve warm, topped with whipped topping or ice cream.
