Coffee flavour is complex and simple at the same time. Still furfuryl mercaptan dominates but more naturalness with complexity is obtained with vanillin, pyrazines and furaneol. The chemistry of the breakdown of furfuryl mercaptan is a massive problem. Well they say coffee comes from Brazil, but some fine coffee is grown in Australia and Papau New Guinea too! |
